If you are tired of eating plain white rice, Kenyan chicken pilau is a great option. The ingredients are easy to find and the cooking process is not complicated at all.
To make Kenyan chicken pilau, you need some spices such as cinnamon, cloves and cumin to mention but a few. If you didn’t know, these spices are very healthy and help the body in different ways. If you are a lover of chicken, you better learn how to cook Kenyan chicken pilau.
½ kg or 10-12 pieces of chicken (it depends with how meaty you want your pilau to be)
1 cup of Rice (Biryani or Basmati rice)
2 onions chopped
2 cups of water
½ tsp of Tumeric
Oil to fry
2 tsp garlic paste
1 tsp of Ginger Paste
A bit of pepper
1 tbsp whole cumin seeds
½ tsp Whole Pepper
2 Cinnamon sticks
Step 1: Wash rice thoroughly and soak for 30 minutes.
Step 2: In a large cooking pan and heat oil.
Step 3: Add the whole spices; cumin, cardamom, cinnamon, pepper, cloves.
Step 4: Let the spices splutter in the oil (around 30 seconds) and add your chopped onions. Fry them until they are translucent stirring with a wooden stick. If you love darker chicken pilau, fry the onions until they are dark and caramelized.
Step 5: Add the chicken, turmeric, garlic and ginger paste, salt.
Step 6: Stir and cook for 7 minutes until lightly browned.
Step 7: Once your chicken is browned, add in the rice (drain all the water from rice before adding it to the chicken) and stir well.
Step 8: Next, add in 2 cups of water and stir. At this stage, taste and adjust the salt and pepper to your likeness
Step 9: Cover your pot and allow the chicken pilau to cook until all the water is drained for 20-25 minutes under low medium heat.
Step 10: After 20-25 minutes, switch off the heat and set it aside for 7 minutes before serving. Next, uncover and fluff the chicken pilau with a fork and serve.
