Recipes and steps for making Sukuma wiki and eggs
2 large eggs
Salt and freshly ground black pepper
1 teaspoon olive oil
3 cups baby spinach
1 clove garlic (minced)
5 plum onions
Heat the vegetable oil till hot and stir. Fry chopped onions and pepper for 1 minute.
Add chopped tomatoes, salt, curry powder and fry for 3 minutes while stirring occasionally.
Whisk the eggs and pour the mixture into the cooking mixture. Leave for 3 minutes while stirring occasionally.
Add the chopped spinach leaves and stir. Leave the mixture to simmer for 3 minutes.
Withdraw mixture from the heat and serve the egg sauce with either ugali, rice or potatoes.
