Most of the time, we can go out of ideas of how to cook greens. Did you know you can cook your favorite greens in peanut sauce? Yes, this meal yummy and filling too. This recipe involves combining greens such as ale, collard greens, Amaranth (mchicha), cassava leaves and spinach with peanut sauce.
Ingredients for Greens in Peanut Sauce
One or Two pounds of greens ( mchicha/amaranth leaves)
Two ripe Tomatoes chopped
One onion finely chopped
Three tablespoon of peanut butter
Salt to taste
Royco to taste
Black pepper or cayenne pepper to taste
Step 1: In a large pan, heat oil and fry until almost brown. Add the tomatoes.
Step 2: Fry the tomatoes until soft.
Step 3: Add the greens, stir and simmer for 7 minutes in minimum heat.
Step 4: As the greens are simmering. In a small bowl, mix the peanut butter with some liquid until smooth.
Step 5: Stir the greens before adding in the peanut sauce.
Step 6: Add the peanut butter mixture to the greens. Season to taste. Simmer on very low heat until greens are tender to your liking.
Enjoy with the greens in peanut sauce with Ugali or Rice
In case you are using peanuts instead of peanut butter, make your homemade peanut paste. Remove the peanut’s shells and roast the peanuts on a baking sheet in a hot oven or in a large skillet on heat, stirring often and then remove the skins. Place the peanuts in a saucepan, add a few tablespoons of water to partially cover them and bring to boil, stirring often. Finally, crush peanuts with a potato masher.
